For a while, I was skipping breakfast because it felt forced. By the time I’ve finished my coffee it’s too close to lunch for me to eat breakfast. Then I’d be starving and overeat or snack the remainder of the day because I missed breakfast.
Since reading Kelly LeVeque’s book Body Love and taking her recommendations, I’ve been trying to make breakfast happen most days in the form of a smoothie. It’s the easiest way to get balanced nutrients with minimal time and mess.
So today I’m sharing the smoothie I’ve been making religiously for a month now, I don’t actually know how I’m not sick of it yet…
- 2 handfuls spinach
- 2 tablespoons cocoa nibs
- 2 tablespoons peanut butter (or almond butter)
- 2 scoops or 1 serving Vital Proteins collagen powder
- 1 cup unsweetened vanilla almond milk
- 5-10 drops of liquid stevia
- 6-8 ice cubes
Just blend in a high-speed blender and serve.
If you’re not into using stevia, you can always add a half of a banana, which I’m sure would be pretty great with the peanut butter and cocoa mix.
I love how the cocoa nibs kind of taste like oreo cookie crumbs when they’re blended up.
