Yesterday was such a productive day and not because I got a ton of stuff done, but because I slowed down and let myself rest for the first time in weeks.
I was able to clean out my refrigerator and re-stock it with healthy food for the week, think tons of veggies and some lean protein.
Because I try my best to exercise intuitively and have been feeling a little rundown, I did this yin yoga class from the Boho Beautiful Youtube channel and it felt amazing. It helped my body release so much tension that was blocking my energy.
And then I took my dog for a casual stroll around the neighborhood to get some light cardio and that completed my exercise for the day.
So today I’m sharing one of my favorite salad dressing recipes. I’m not a big fan of store bought dressings because they usually have sugar, emulsifiers, and thickeners added that aren’t necessary and it’s very easy to make my own dressing.
I like to make a batch or two of salad dressing at the beginning of the week so that It’s easy to throw a salad together. My favorite salad is just greens, avocado, radish and red onion, but sometimes I switch it up.
Here you have one of my favorite dressings ever. It can be used as a marinade for chicken too.
Lemon Thyme Dressing
- 1/2 cup extra virgin olive oil
- Juice from 2 lemons (If you like less tangy then only use 1 lemon and add an extra 2 tablespoons of EVOO)
- a handful of fresh thyme
- 2 raw garlic cloves
- 1/2 – 1 teaspoon salt (depending on your palate)
- several cracks of black pepper
Add all of the ingredients to a food processor or blender and blend until smooth. The dressing should be creamy and smooth.
I like to store it in a glass jar and use as needed.
