At restaurants, I’ll normally order basic cocktails like vodka-soda or tequila on the rocks. Who needs all that extra sugar anyway? Plus, sweet cocktails are a known cause of terrible hangovers.
Last summer, feeling adventurous at one of my all time favorite restaurants in NYC, I ordered a coconut margarita. I love coconut everything and ABC Cocina is super fresh, amazing, awesomeness. It was totally worth it.
Instantly, I felt inspired to recreate the margaritas at home, using healthy ingredients. They taste almost identical to the restaurant version (maybe a tiny bit lighter). They’re super simple to make and thankfully no muddling is required. I’ve tested them out on quite a few friends, and let’s just say, they go down easy.
(Makes 1 cocktail)
1- 1.5 oz. Blanco tequila (depending on how strong you like your cocktails)
1.5 oz light culinary coconut milk
2 oz. pineapple juice (I like to use Whole Food’s fresh pressed)
a lime wheel to garnish
a cocktail glass for serving
After gathering the ingredients and tools, first, fill the shaker and cocktail glass with ice.
Next, add the tequila, light coconut milk and pineapple juice to the shaker
Shake it very hard, pour into the cocktail glass and serve with a lime wheel.
